Abundance. This season is filled with so much goodness, remember that. When I find myself in abundance, I make the most of it, and what better way than to collaborate and share. Abundance can come in many forms, not just material or physical. Our feelings can present us with an overflowing sense of positivity, of growth, of being in awe, and an infinite flow of possibilities. That is abundance.

My friend Giovanna Garcia of A Purified Life & I co-created this recipe for you, a perfect addition to any party or gathering this season. WE shared in an abundance of apples, so of course we made apple pie!
What a delicious treat it was. Paired with a coconut based ice cream, it's perfection. Added in Reishi mushroom extract for our medicinal boost, inviting in immune promoting properties and spirit healing magic. Spiced up with aromatics like cardamom, nutmeg and ginger. Not only is this recipe incredibly tasty, it's also super nourishing. We ate this for breakfast & lunch!! Hehe :)))
Best Ever Apple Pie!!
2 cups oats
1 cup almonds
2 T flax or chia plus 1/4 cup water
2 T maple syrup
1 T lucuma powder
1/2 tsp cinnamon
1/4 tsp each ginger, nutmeg, cardamom
1/4 tsp himalayan salt
1/4 cup coconut oil, melted
>> Grind flax or chia in a spice grinder, to make a powder and mix with water to make a gel.
>> Blend oats and almonds in a high power blender, into a flour.
>> Melt down coconut oil, if not already liquid.
>> Add all ingredients to a large mixing bowl and mix by hand.
>> Press crust mixture into a pie dish, evenly pinching the sides and set aside.
5 apples, sliced
¼ cup coconut palm sugar
3 Tablespoons melted coconut oil
2 Tablespoons pure maple syrup
2 Tablespoons lucuma powder
1 teaspoon cinnamon
1 teaspoon cardamom
½ teaspoon reishi powder
Pinch of nutmeg
Pinch of sea salt
>> Combine all filling ingredients in a bowl. Taste and adjust flavor/sweetness to your preference.
>> Pour over crust and spread out evenly in pie pan.
>> Bake at 350 F for 45-50 minutes, until crust is slightly browned and apples are cooked through.
Reishi Mushroom :: Queen healer, used in traditional Chinese & Japanese medicine. This gorgeous shiny, red polypore grows on old growth and dying trees, soaking up the medicine from the mossy forest. Using a hot-water extract is my favorite form since it pulls many of the beneficial properties out for easier absorption into the cells. High in beta-glucans for anti-tumor actions & immunity strengthening. & also an adaptogen that can help the body deal with stress, making this one of my favorite daily tonic herbs!
