Over 8 years ago I had my first experience with 'raw food' and one of the first recipes I learned was chocolate mousse // pudding. This recipe is revisited with a new flavor and feel. With the adaptogenic herbs, it gives greater depth of flavor with the bitter & sour, and a feeling that lifts you even higher. Share & enjoy!
1 large avocado
2-3 T raw honey (plus a few drops stevia if desired)
4 T cacao powder
1 Kiss of Venus or Tantric Tea chocolate bar (1.1oz chocolate)
3 T coconut oil
1 T lucuma powder
1/2 tsp matcha powder (optional)
1/2 tsp mucuna extract powder (optional)
1/2 tsp reishi extract powder (optional)
1/4 tsp hibiscus powder (optional or lemon juice)
1/2 tsp vanilla bean extract (making your own is easy!!)
large pinch sea salt
1/2 cup pure water
Pit avocado & scoop out fruit into a high power blender. Melt down chocolate over a double boiler, with coconut oil if it is solidified. Add all ingredients to the blender, adding water last. Blend on low to medium, until smooth, adding water if necessary. *Sometimes stopping the blender and shaking it will remove the air bubble that forms when working with a thick cream. Do this a few times, if necessary. Pour into cups & chill a few hours, or in the freezer if serving within 30 minutes. Makes 3-4 servings.
